Since leaving Cornell University in 1999 I have taught a number of graduate courses at UCSB on the topic of Scalable Internet Services and Systems. All these course are very hands-on in that they include a significant project component. I believe in "learn by doing" when it comes to systems. You need the theory and the background, but unless you put it in practice it doesn't really sink in!
